Green Leafy Vegetables


This is the most important group of vegetable due to their endless health benefits. Not only do they contain a great deal of vitamins and minerals, but they are known to boost the strength of your immune system. Never avoid your greens! Some examples of the green leafy veggies include: parsley, Belgian endive, Collards, Romaine lettuce, Kale, Escarole, Spinach, Swiss chard, and watercress.

Onions


Chopping them is no fun, but once you hear how great this potent antioxidant-filled veggie is for you, you will move past the chopping-induced tears. Believe it or not, the sulfur in onions that is responsible for the stink and sting; actually lowers your cholesterol. Not to mention the adenosine in onions prevents against blood clots, helping ward off heart attacks. Onions are great in salsas, salads, grilled, sautéed…any way you can think of.
